Ingredients:

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1 cup chopped asparagus
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 2 tablespoons sativa cannabis-infused olive oil
  • 1 tablespoon unsalted butter
  • 1/4 cup grated Parmesan cheese
  • Zest and juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, heat the vegetable broth over low heat until warm. Keep it warm throughout the cooking process.
  2. In a separate large saucepan, heat the cannabis-infused olive oil and butter over medium heat. Add the chopped shallot and garlic, and sauté until softened, about 2-3 minutes.
  3. Add the Arborio rice to the saucepan and stir to coat the grains with the oil and butter mixture. Cook for another 2-3 minutes, until the rice becomes translucent around the edges.
  4. Pour in the dry white wine and cook, stirring constantly, until the wine has been absorbed by the rice.
  5. Begin adding the warm vegetable broth, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more. Continue this process until the rice is creamy and cooked al dente, about 20-25 minutes.
  6. During the last 5 minutes of cooking, add the chopped asparagus to the risotto and continue cooking until the asparagus is tender but still vibrant green.
  7. Remove the risotto from the heat and stir in the grated Parmesan cheese, lemon zest, and lemon juice. Season with salt and pepper to taste.
  8. Serve the cannabis-infused lemon asparagus risotto hot, garnished with additional Parmesan cheese and a sprinkle of lemon zest, if desired.
